Motorhome Recipe: No Oven Maelstrom Fish Pie

motorhome recipe no oven fish pieJay caught a bucket-load (literally) of pollack at the Saltstraumen Maelstrom in Norway, so we had to think up some new things to do with them. We don’t have an oven in our van, so came up with this motorhome recipe: no oven fish pie.

Sadly it was soooo tasty, we scoffed the lot before we got a photo of it.

Serves 2 (with big portions)

Ingredients

  • 1/2 onion
  • 1/2 can of peas
  • 1/2 can of sweetcorn
  • 1-2 cloves of garlic
  • 2 large fish fillets (or four if small) – can be smoked or fresh, any fish will do
  • A few potatoes (can add in a bit sweet potato as an alternative)
  • Mug of milk (or small carton of cream), butter & plain flour (for the white sauce)
  • Salt and pepper
  • Grated cheese for topping (optional and depends if you have any!)

Method

  • Melt a large knob of butter (25g ish, we only use scales for baking) in a pan.
  • Add a couple of tablespoons of flour stirring until it makes a paste.
  • Take off the heat and slowly stir in milk/cream to make a sauce, return to heat for a few minutes to thicken.
  • Once thick, put to one side (or pop in a bowl if you need to reuse the pan to boil the spuds in).
  • Boil the potatoes/sweet potatoes.
  • While the spuds are boiling, melt a small knob of butter in a large frying pan and brown the onion.
  • Add the fish to the frying pan, if the fillets still have a skin on, place skin side down in the pan for a couple of minutes, then turn over and it should peel off with a spatula.
  • Once the fish is almost cooked add the garlic and pepper to taste.
  • Add the white sauce, peas and sweetcorn and cook for a few minutes longer.
  • Drain and mash the potatoes with milk, butter, salt and pepper.
  • Serve the fish onto plates.
  • Spoon (or pipe if you have a piping bag) the mash onto the fish stew to serve – if you are feeling posh, sprinkle over some grated cheese while the mash is still hot to melt it.

Feel free to play around with the ingredients depending on what you have in your cupboards, what you can get hold of in the country you are in or what you catch that day!

    Recently discovered how to make a cheese sauce without flour, courtesy of Jamie Oliver! simply mix parmesan cheese with creme fraiche, according to taste. Heat, thin with water or cooking liquid if you like.
    When we are next on hookup, I will try it in my Remoska, just pouring it cold on top of something as a topping!
